Khandvi is the most popular gujarati appetizer. It is a unique gujarati dish made with besan (gram) flour.


  • Besan/Chickpea (Gram) Flour – 1 cup
  • Yogurt – 1/2 cup
  • 1 & 1/2 cup water
  • Turmeric Powder – pinch
  • Asafoetida – pinch
  • Salt – to taste

For Seasoning:

  • Oil – 4 tsp
  • Mustard Seeds – 1 tsp
  • Asafoetida – pinch
  • Green Chillies – 2 (cut length wise)
  • Cilantro for garnishing


In a large skillet, add besan (gram) flour, 1/2 cup yogurt and 1 1/2 cup water. Add some salt, turmeric powder and asafoetida. Blend everything together using hand blender. Heat the mixture on medium low heat and stir it slowly so it is lump free. In about 7-8 mins the mixture will start getting thick. Lay out Aluminum Foil on the counter top. Spoon batter along one edge of the foil and with a flat spatula, gently pull the mixture down along the foil. Once the foil is completely covered, start on the next piece of foil. Repeat until all mixture is thinly spread. Cut it into small pieces.

Heat oil in a small skillet. Add mustard seeds and allow them to pop. Add asafoetida, green chillies and sesame seeds. Sprinkle it over Khandvi and garnish it with cilantro. Enjoy 🙂
