Suki Bhaji

Sukhi Bhaji is a traditional dry potato dish very popular in the state of Gujarat. It is simple to cook and takes less than 10 minutes. When you are running short of vegetable in your pantry, try this one. All it needs is potatoes and some spices. Enjoy 🙂

Ingredients:

  • 3 medium Boiled cut Potatoes
  • 2 tblsp vegetable oil
  • 2 tblsp cumin seeds
  • 1 tblsp asafoetida
  • 1 tblsp crushed green chillies
  • 5-6 Curry Leaves
  • 1 tblsp of turmeric powder
  • 1 tblsp red chilly powder
  • 1/4 bunch cilantro, finely chopped
  • 1 tblsp lemon juice
  • Salt as per your taste

Directions:

In a small skillet, heat 1 Tbsp of Oil slightly. Add cumin seeds, asafoetida, curry leaves and green chillies. Ass turmeric powder and stir it for few minutes. Mix in the cut boiled potatoes and stir slowly. Add salt and red chilly powder. Squeeze in some lemon juice. Sprinkle finely chopped coriander & Cook for 8-10 mins.
