Handvo

Handvo – Everyone’s Favorite and most popular dish among Gujarati’s. Perfect food for lunch or dinner.  Looks like cake but it’s spicy and savory. You can also add other vegetables like carrots, corn and peas. It brings the YUM factor to the table. Enjoy 🙂

Preparation Time: 45 minutes

Ingredients for preparing the batter:

 

  • Handva Flour – 2 cups
  • Yogurt – 1/2 cup
  • Green Chilies – 2 – 3 or to taste, finely chopped or ground
  • Ginger Paste – 2 tsp
  • 1 medium grated/shredded Doodhi/Lauki/bottle gourd
  • Salt – 2 tsp or to taste
  • Sugar – 2 tsp
  • Turmeric Powder – 1/4 tsp
  • Asafoetida (Hing) – 1/4 tsp
  • Red Chili Powder – 1/2 tsp

In a medium size mixing bowl, add Handva flour and mix in the following: Ginger, Green Chilies, Salt, Sugar, Asafoetida, Turmeric Powder and Red chilly powder.  Add 1/2 cup yogurt and 1/2 cup water. Mix it well. Cover and let this batter rest for 4-6 hours.

Ingredients for cooking:

  • Oil – 4 tblsp
  • Turmeric Powder – 1/4 tsp
  • Red Chili Powder – 1/2 tsp
  • 1 Dry red chilly
  • 5-6 cloves
  • 6-8 Whole black pepper
  • Sesame seeds – 1/2 tblsp

Add grated bottle gourd, coriander & ENO (fruit salt) to the batter.

In a non stick pan, heat 4 Tbsp of Oil. Add dry red chilly, cloves and peppers. Add turmeric powder and red chilly powder. Add sesame seeds and slowly add the batter. Let it cook for 15-20 mins. Turn it over and cook the other side for another 10 mins.

Serve it Hot!
