For vegetarians it is hard to imagine pasta without cheese. I love Italian food so this is my own simple recipe to cook healthy tasty pasta and that too with very little Parmesan cheese. You can add more veggies like asparagus or spinach but it depends what all u ahve in your pantry. Enjoy!
Preparation time: 20 Minutes
- 2 Cup Penne Pasta
- 1 Crown Brocolli
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 1 Carrot
- 2 tblsp Sun Dried Tomato
- 2 tblsp Mc Cormick Italian Seasoning
- 4 tblsp Bertolli Extra Virgin Olive Oil
- Salt and Pepper as per taste
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, add EVOO. Stir in the veggies red and green bell pepper, carrot, broccoli, sun dried tomatoes, Italian seasoning and salt pepper. Simmer for ten minutes till the veggies are cooked.
Add red crushed pepper if you like it little bit hot.
Toss Pasta with the cooked vegetables.
Serve garnish with Grated Parmesan Cheese.
